Eastern North Carolina is the center of vinegar base pork barbecue. Every town east of I-95 seems to have at least one barbecue restaurant….that everyone believes is the best. The more famous being Bill’s and Parker’s in Wilson and Wilber’s in Goldsboro.
McCall’s has restaurants in Goldsboro and Clayton, NC with annual sales of $9.6 miion….a substantial business.
Two business lessons from the story:
- One of the owners was always present at each restaurant.
- “You have to serve good food (and service) and you have to do it everyday. You can’t do it good one day and not quite so good the next day, because people have to know what to expect.”
